Pita Bread

Ingredients

  • 1 cup warm water (90-100 F)
  • 1 cup flour
  • 1 package (.25 oz) active dry yeast
  • 1 1/2 T olive oil
  • 1 3/4 teaspoon salt
  • 1 3/4 cup flour
  • 1 t olive oil (divided)
  • Directions

    1. In a stand mixer, whisk the water, flour (1 cup), and yeast until smooth.
    2. Wait 15 - 20 minuts (mixture should have bubbles form).
    3. Add olive oil and salt to mixture, followed by rest (1 3/4 cup) of flour.
    4. Mix with a dough hook (dough should pull away from the sides).
    5. Knead on low speed for 6-8 minutes until "springy".
    6. Remove the dough, wipe the bowl with olive oil, replace the dough.
    7. Let dough rest for 2 hours (should double in size).
    8. Cut dough into 6 equal pieces.
    9. Form into balls, folding outside of dough under the ball.
    10. Cover balls with oiled plastic and allow to rise for 30 minutes.
    11. Form into rounds about 1/4 inch think and let stand for 5 minutes.
    12. Heat a thick-bottomed pan on high heat without adding any oil or butter.
    13. Add one circle of dough to the pan, and let it puff up.
    14. After about 2 minutes, flip the pita bread. It should be slightly golden.
    15. Cook the other side for another 2 minutes or until golden-brown.
    16. Place on a wire rack to let cool and cover with a dish towel.
