Pita Bread
Ingredients
1 cup warm water (90-100 F)
1 cup flour
1 package (.25 oz) active dry yeast
1 1/2 T olive oil
1 3/4 teaspoon salt
1 3/4 cup flour
1 t olive oil (divided)
Directions

In a stand mixer, whisk the water, flour (1 cup), and yeast until smooth.

Wait 15 - 20 minuts (mixture should have bubbles form).

Add olive oil and salt to mixture, followed by rest (1 3/4 cup) of flour.

Mix with a dough hook (dough should pull away from the sides).

Knead on low speed for 6-8 minutes until "springy".

Remove the dough, wipe the bowl with olive oil, replace the dough.

Let dough rest for 2 hours (should double in size).

Cut dough into 6 equal pieces.

Form into balls, folding outside of dough under the ball.

Cover balls with oiled plastic and allow to rise for 30 minutes.

Form into rounds about 1/4 inch think and let stand for 5 minutes.

Heat a thick-bottomed pan on high heat without adding any oil or butter.

Add one circle of dough to the pan, and let it puff up.

After about 2 minutes, flip the pita bread. It should be slightly golden.

Cook the other side for another 2 minutes or until golden-brown.

Place on a wire rack to let cool and cover with a dish towel.

Makes 6 pita breads.
